Vietnamese cuisine is quietly taking on a more modern look. When herbs, spices, and vibrant sweet-and-sour flavors meet the refined techniques of French cooking, along with a beautiful space that makes you want to stay all night, Vietnamese food can become an experience with a real sense of occasion. New brand Maison Viet 越舍 has officially opened at Far Eastern Garden City at the Taipei Dome. Rooted in classic Vietnamese flavors, it combines French culinary techniques with spatial aesthetics to create what the brand describes as Taiwan’s first “Vibe Dining” Vietnamese restaurant.

Like stepping into an old French-Vietnamese film, with a space that’s just as photo-worthy
When you step into Maison Viet, what leaves the first impression may not be the table, but the space as a whole. Designed by Xing Gou Design, it uses pine green, pure white, and jet black as its main palette, with arches, stripes, and video art creating a French-Vietnamese atmosphere somewhere between retro and modern. The service team wears “French-style áo dài,” while French chansons play in the background, turning “Vibe Dining” into a complete five-sensory experience, from the visuals and music to the table.
The Vietnamese flavors are still there, just dressed in a more refined form
The menu was developed jointly by Vietnamese chef Chen Yu-sheng and a Taiwanese chef with a background in European and French cuisine. It preserves the layers of herbs, aromatics, and sweet, sour, salty, and savory flavors that define Vietnamese cooking while incorporating the finesse of French techniques. Start with the classic fresh spring roll platter, signature Beef Pho King, shrimp cloud tartare, and French-Vietnamese duck confit. For groups, there are also shareable dishes such as signature sambal fried rice with a 6 oz ribeye steak and slow-braised Dongpo pork in coconut milk.

Alongside the food, Maison Viet offers Vietnamese coffee, natural wine, and champagne, letting a meal stretch from dinner into a pleasantly tipsy evening. Rather than the typically fast-paced feel of traditional Vietnamese restaurants, this is more like a new spot in the city where you can settle in for a chat, a date, or a few shared dishes with friends.
