What if, instead of dining on a terrace, you could have summer dinner inside a “hot air balloon”? Every summer, Beaverbrook in Surrey, England, sets up six colorful hot air balloons in its Italian Garden, arranged around a fountain pool. Best of all, they aren’t just photo props: each one is a private dining space of its own.

From afar, they look like hot air balloons that have landed in the estate garden. Up close, you’ll see that the wicker baskets below have been turned into seating areas, while the enormous colorful balloons overhead make it feel as though you’re about to take off. The six seating areas are spread around the fountain pool, each retaining its own sense of privacy. The setting alone is dreamy enough.

The food served in this dreamy setting is just as thoughtfully prepared. Inside the balloons, a five-course menu centered on Japanese yakiniku features dishes such as Hokkaido scallop tartare and A5 wagyu sirloin, paired with wine from Albury Estate in the local North Downs and Silent Pool Gin. It brings together an English country estate and Japanese cuisine in an unexpected way.

Since Beaverbrook opened as a hotel in August 2017, The Dining Room in the main house has specialized in Japanese cuisine. Now helmed by Wojciech Popow, it takes the dining table outdoors for the summer. Surrounded by greenery, fountains, and giant hot air balloons as you enjoy A5 wagyu and Japanese dishes, this may be the most fairy-tale-like summer dinner there is!
