On sweltering summer days, when you don’t have much of an appetite, a delicious piece of bread can be more tempting than a hearty meal. Since arriving in Hong Kong at the end of 2024, Japanese bakery TruffleBAKERY has sparked a wave of queues with its White Truffle Shio Pan. This June, the brand has more good news: in mid-July, it will open its first pop-up in Kowloon at Mong Kok’s MOKO, while expanding its hugely popular Shio Pan line with the world-first launches of its Cheese Shio Pan and Lemon Shio Pan.

Hong Kong gets first taste: Double-cheese and lemon Shio Pan
The TruffleBAKERY Hong Kong team has been working closely with Japan’s head baker, Naoko Komata. Available from June at the Causeway Bay flagship store and SOGO store ahead of anywhere else, the Cheese Shio Pan (HK$ 26) has Parmesan cheese mixed into and sprinkled over the dough, then finished with black pepper. Once baked, its double layers of aroma are truly hard to resist.
Arriving in July, the Lemon Shio Pan (HK$ 29) is made by kneading fresh lemon juice and zest into the dough, then topping it with a lemon glaze that strikes a sweet-tart balance. It’s especially suited to summer. For now, both new flavors are Hong Kong store exclusives and will be introduced in other regions later.
A must-try for matcha fans, plus more summer baked goods
Alongside the two new debut flavors, the Matcha Shio Pan (HK$ 33), a bestseller throughout Japan, will also arrive in Hong Kong in July. The dough is made with carefully selected Kyoto matcha powder and filled with tempting matcha chocolate, so matcha fans definitely won’t want to miss it.
If you prefer savory food, don’t miss the Edamame Basil Mascarpone Toast (HK$ 36), newly available at the ifc pop-up. It starts with the bakery’s house-made sourdough, topped with Japanese edamame and basil mascarpone for a soft, smooth texture that feels perfect for summer. The Causeway Bay-exclusive Lemon Cake and SOGO store-exclusive Carrot Cake can be enjoyed straight from the fridge for a cool, sweet afternoon treat.
Mong Kok MOKO pop-up opens in mid-July
For food lovers in Kowloon, this is surely this month’s most exciting news. In mid-July, TruffleBAKERY will open a pop-up at MOKO New Century Plaza on Prince Edward Road West in Mong Kok. It will offer its existing range of popular products, as well as a selection of new items.
TruffleBAKERY’s latest initiative goes beyond simply bringing in popular items from Japan. The brand has also carefully developed debut flavors for the Hong Kong market, bringing a fresh take to its classic Shio Pan that fits women’s expectations for refined everyday food.
