Coffee and dessert is nothing new, but what if it were served like fine dining—a course of coffee, a bite of dessert, following the aromas and flavors course by course? This fall, BEMO Salon has teamed up with SEASON Artisan Pâtissier to launch a three-month limited project starting in mid-October, titled “Aroma in Four Movements.” This isn’t just about finding a cake to match a cup of coffee; the entire coffee pairing experience is written as four “movements.” From specialty coffee and milk-washed clarification to different extraction methods and coffee mocktails, each cup meets a dessert created just for it. The first course even pairs Alishan Geisha with chocolate, longan, pomelo, and Alishan wasabi!

Coffee + dessert, served like fine dining

 

What makes this collaboration interesting is that BEMO Salon and SEASON didn’t stop at the simple question of “what dessert goes best with coffee.” Inspired by musical structures, the entire experience is divided into four chapters: Prélude, Suite, Variation, and Nocturne. As the sequence progresses, the coffee constantly changes form. From specialty coffee itself to milk-washed clarification, different extraction methods, and mocktails, the aroma, temperature, and texture evolve along the way.

It’s like a tasting menu, only this time, coffee is the protagonist, and the desserts in dialogue with it are left to Chef Season (Hung Shou-cheng), founder and head chef of SEASON Artisan Pâtissier. With a deep background in Western fine dining, he naturally excels at applying culinary logic to pastries, using seasonal Taiwanese ingredients to translate memory and terroir into flavor. As a result, this pairing isn’t just about striking a “sweet + bitter” balance; it’s more like letting two different flavor languages converse with each other.

The first movement alone is enough to pique your curiosity. The Prélude begins with a washed Geisha from Alishan’s Zouzhuyuan, prepared in a pot. The light roast coffee carries bright floral and fruity notes of orange blossom, kiwi, apple, and red plum. Its accompanying dessert isn’t the berry or citrus tart you might expect; instead, it brings chocolate, Alishan wasabi, longan, and pomelo together.

Upon tasting, the pomelo first catches the Geisha’s natural citrus acidity, while the chocolate and longan gradually add the sweetness and body of ripe fruit, before the wasabi finally draws out a subtle hint of spice. Interestingly, the dessert isn’t trying to steal the spotlight from the coffee; it encourages you to take another sip after eating. The floral notes and fruity resonance hidden within the coffee suddenly become clearer. This is perhaps the true magic of a pairing: the exact same cup of coffee suddenly becomes another cup of coffee simply because of what you just ate.

As specialty coffee becomes increasingly focused on origin, processing, and extraction, the way we drink coffee seems to be changing too. “Aroma in Four Movements” doesn’t treat dessert as a sidekick to coffee, but lets the two complete a flavor journey together. Moving from Prélude to Suite, Variation, and into Nocturne, each course sets the stage for the next flavor.
